Y’all, this meatloaf recipe is so good and so easy. The lean ground beef combined with lean ground turkey creates a consistency that is fool-proof. You’ll get perfect slices every time – no more meat crumbles!

The secret ingredient? Stove Top stuffing! Instead of plain ol’ breadcrumbs, we’ll use instant stuffing mix to be the binding agent for this recipe. It’s pre-seasoned and lends a great flavor to the dish.

I absolutely loooove this meatloaf pan from Rachel Ray. It has a slotted insert in it which lets any of the drippings fall through the bottom into the lower pan. This meatloaf recipe is very lean, so it doesn’t produce much grease, but with this pan, the meat isn’t sitting in any grease at all! It looks like she doesn’t carry this exact pan anymore, but I found this one on Amazon that is very similar. It also doubles as a bread pan!

A few quick notes

  • Now, as good as this meatloaf is, it isn’t really meatloaf without a perfectly sweet, but tangy sauce slathered all over it. I’ve added a ketchup based sauce recipe below, which you absolutely must try. It complements this easy meatloaf wonderfully and even makes a yummy gravy for mashed potatoes.
  • This recipe calls for half of a can of tomato sauce. Try my easy homemade taco meat to use up the other half of the can!
  • Feel free to substitute Italian sausage for the turkey for a different spin on the flavor, or even go full beef if you wish.
  • Be sure to get in the bowl with your hands and really get the beef and turkey combined completely. Also, the meat is cold – try wearing gloves if it is uncomfortable for you.
  • I’ve added a 10 minute resting time after removing this meatloaf from the oven. Don’t skip this step! This will help keep the loaf together.

Ingredients

For the Meatloaf

  • 1 lb lean ground beef
  • 1 lb lean ground turkey
  • 1 box Stove Stuffing Mix any flavor you like
  • 1 small onion finely diced
  • 2 eggs
  • 1 cup beef broth or water
  • 1/2 8oz can tomato sauce or 1/4 cup ketchup
  • 1 tsp dried parsley

For the sauce

  • 1 cup ketchup
  • 1 cup water
  • 1/4 cup brown sugar
  • 1/4 cup white vinegar
  • 1 tbsp mustard
  • 1/4 tsp salt or to taste

Instructions

  • Preheat oven to 375 degrees.
  • In a large bowl, combine the ground beef, ground turkey, stuffing mix, diced onion, eggs, broth, tomato sauce and parsley. Mix well with your hands.
  • Once the meat mixture is mixed well, shape and put into a loaf pan. Alternatively, you can shape into a loaf and place into a 9×13 baking dish.
  • Bake, uncovered, for 1 hour and 10 minutes.
  • Meanwhile, add all of the sauce ingredients to a sauce pan and simmer on low for 10 minutes
  • Remove the meatloaf from oven and let rest for 10 minutes before slicing. Cover with the sauce and enjoy!
